egg-spaghetti with tattlers and rocket
Clean 1/2 kg of tattlers - make sure they are small ones and fished by "lampara"
( a fishing boat equipped with a large lamp light to attract fish at night)
- and shortly cook them in some extra vergine olive oil on a high flame. Let
them cook just a couple of minutes, adding a clove of garlic, a fresh chopped
tomato, then quickly add the pasta which meanwhile have been boiled and then
strained. Whip the whole preparation for a few seconds, adding the fresh rocket,
thoroughly washed, in the end. Serve pasta in a plate, on a bed of rocket. Measure
salt according to taste.
